It’s Honeycrisp Season

Who knew apples were so complicated?  Apparently the origins of the Honeycrisp are a bit vague, but to my palate the taste is anything but.  I have my favorites for pie, for apple butter, for apple sauce, for frying old school southern style (with bacon fat) but I find there is no better apple for eating than the Honeycrisp.  The taste is fruity, floral, perfectly sweet and intense but the texture of a perfect Honeycrisp is what sends the variety over the top.  Biting into a Honeycrisp is a vibrant combination of crunchy, juicy, and, dare I say…crispy?  I usually have to eat mine with a paper towel in hand the same way you would with a juicy peach or plum.  I’ve gone through my whole bag from Lyman’s pretty quickly, I might have to scope out my local grocery stores until I can head back down.
